The rediscovery of the flavors of tradition also involves the recovery of the "Leonforte Black Lentil", ancient legume typical of the province of Enna, and the Leonforte area in particular, that in the recent past has dangerously almost disappeared, having been produced in time in increasingly small.

Much appreciated until the '50s, in fact, its production has gradually declined to the advent of types of lentils a lot more resistant to external agents, more fruitful in the quantities and especially that lent themselves to mechanization in the various stages of cultivation.

Cultivation that has only recently been taken up by a few leonfortesi farmers  and which is characterized by its extreme complexity and hard work: all activities on the plan must be carried out manually, because of the sliding direction of the stem, very short, almost in contact with the ground which therefore makes it impractical to use the machines for harvesting
Even the subsequent operations of selection should be performed necessarily by hand. Every single gesture of this lentil responds to the dictates of traditional Sicilian farmhouse.

The organoleptic characteristics of this legume so special in color and intense flavor are entrusted to a higher percentage of protein and fiber and less fat content than common lentils.
