Our production is only Extra Virgin Olive Oil, pure, obtained exclusively by pressing the olives of the variety " Moresca (Moorish)" ("Nerba" in the dialecto of Leonforte), typical plant Sicilian hinterland, hand harvested between October 1 and December 15 before full maturation, only with the help of mechanical harvesters to facilitate the fall.
Submit to squeezing a green color tending to yellow in the following months, fruity smell with any slight feeling of grass, a fruity flavor balanced with spiciness and bitterness.
